Arroz de cogumelos e peito de frango :: Mushroom rice with chicken breast

Um prato muito outonal, muito apreciado cá por casa e tão simples de preparar :D


Ingredientes:

1 embalagem de cogumelos brancos frescos (340g)
1 embalagem de cogumelos pleurotus frescos (250g)
1 cebola média
3 dentes de alho
1+1/2 medidas de arroz
3+1/2 medidas de água a ferver
1 peito de frango
Azeite
Sal e pimenta q.b.

Há quem utilize os cogumelos directamente da embalagem para o tacho, mas eu prefiro sempre remover a capa do "chapéu", puxando uma pequena película desde a zona das lâminas até ao topo, raspar-lhes as hastes e cortar-lhes os pés (só uma pequena lâmina, por já estar seca). Comece por picar a cebola e os dentes de alho, acrescente um fio de azeite e deixe refogar ligeiramente. Corte o peito de frango em cubos e junte ao refogado, deixando abafado por uns minutos. Passe os cogumelos por água e junte aos restantes ingredientes, acrescentando de seguida a água quente. Deixe a água ferver e junte o arroz e os temperos a gosto. Deixe cozer em lume-brando durante cerca de 20 min.

NOTAS:
É um arroz malandrinho, ou seja, que fica caldoso, por isso é natural que necessite rectificar a quantidade de água e, consequentemente, de temperos.
- Há quem prefira confeccionar este prato com carne de porco, nomeadamente, entrecosto. Por aqui preferimos as carnes brancas, mais saudáveis ;) É também por isso que o azeite é usado com conta, peso e medida (porque apesar de ser uma gordura "boa", é uma gordura :) ).

1 pack of fresh white mushrooms (340g)
1 pack of fresh Pleurotus mushrooms (250g)
1 medium onion
3 garlic cloves 
1 +1/2 rice cups
3 +1/2 cups of boiling water
1 chicken breast
Olive oil
Salt and pepper q.s.

Some people use mushrooms directly from the packaging to the pan, but I always prefer to remove the cover of the "hat", by pulling a short film from the blades zone to the top, scraping their stems and cut their feet (a small blade, just because, it is already dry). Start by chopping the onion and the garlic cloves, add a little olive oil and cook slightly. Cut the chicken breast into cubes and add to the stew, leaving smothered ofor a couple of minutes. Wash the mushrooms and add them to the remaining ingredients, adding hot water. Let the water boil and add the rice, seasoning as you like. Let it cook on low-heat for about 20 min.

NOTES:
- It's a juicy rice, so it's natural that it requires correction on the amount of water and, hence, seasoning.
- Some people prefer to cook this dish with pork meat, namely spare ribs. Here at home we prefer white meat, is healthier ;) It's also the reason why olive oil is used carefully (because, despite being a "good" fat, it's a fat :) ).
